Oreo Cheesecake!🍰


I wanted to make a dessert for M because he was in town for his birthday. My microwave-oven is still out of order and I have no intentions of getting it fixed. Hence I have been preparing a varied set of ‘no bake’ desserts. The first in this attempt was a Cheesecake. I was skeptical about the taste and its fluffiness. As I had never made a ‘no bake’ version, I was really worried about the end result. IMHO it was just okay. M on the other hand was very impressed with it.

Without further ado for all those looking to indulge in some easy to make desserts here is what you need to make this Cheesecake!

Ingredients:
30 Oreo biscuits without the icing
Cream Cheese – 180g
Set curd – 450g
Gelatin powder -10g
Powdered Sugar – 100g
Melted Butter – 50g


Method:

1. Take 20 Oreo biscuits and remove icing. Crush the biscuits and once powdered add butter to it and mix it well.

2. Line butter paper in a serving dish and spread the Oreo mixture to form the crust of the cake. Make sure you press down the mixture so as to ensure there are no gaps when pouring the cake mixture. Refrigerate.

3. Blooming the gelatin: Take10g gelatin in a bowl and wet it with room temperature water. Ensure not to add too much water. Just sprinkle enough to dampen the powder. Prepare a hot bath and melt the gelatin for 4-5 minutes.

4. Once melted, add 3 tbsp of curd to gelatin and mix well. In a mixing bowl pour remaining curd and slowly add gelatin-curd to this mixture and whisk well. Once the mixture starts peaking add cream cheese to the mixture bit by bit. I divided it into three portions and kept whisking to reach a creamy consistency with the curd mixture. Do not pour all of the cheese in one go, beating it will be a task.

5. Once the mixture has blended well add sugar and whisk till the mixture has sweetened. Taste to ensure that the sweetness is right. For those who like their dessert extra sweet can add more sugar.

6. Now bring the dish with the Oreo crust out and pour the cake mixture into it. Tap the dish gently to expel air bubbles and even out the surface.

7. Place the dish back in the fridge and leave it in overnight.

8. Just before serving, remove the dish out and sprinkle chunks of remaining Oreo biscuits on top and then slice to serve.

Notes:

The cream cheese, yogurt, butter and water used to bloom the gelatin should all be at room temperature.

You can add Oreos in the cake mixture too to give it that extra crunchy texture. I like my cheesecake smooth so I skipped that step.
