Hello reader, this time I am back with a recipe post. In the previous recipe post – Vanilla sponge withbuttercream frosting I had mentioned my backup cake. Well, the back up was just as light and delightful as the genoise and it was bursting with mangoness. I had asked Marley to buy me half a dozen ripe mangoes that were ready to eat. I refrigerated them to chill completely before I transformed them into a delightful disk of cheesecake. I had previously made an Oreo cheesecake and Litchi Cheesecake in one I had used curd in the other fresh cream. I wanted to retain the primary flavour of mangoes and a hint of salty-cheesy flavour from the cream cheese. Therefore, I decided to completely skip any additives to add volume to the cake. I have a slight obsession with Japan and all things Japanese. This fascination of mine has lead me to some very exclusive websites where I can read and watch mangas and animes to my heart’s content. It was on the comment section of one particular anime called ‘Food wars’ that we all got discussing how intricate the Japanese are with their desserts. It was from there that I learnt to get the smoothest slices of cheese cake. This person told me that if I follow the recipe I will not be eating a heavy dense cheesecake but a soft fluffy piece of cloud. I wanted to make a dessert for M because he was in town for his birthday. My microwave-oven is still out of order and I have no intentions of getting it fixed. Hence I have been preparing a varied set of ‘no bake’ desserts. The first in this attempt was a Cheesecake. I was skeptical about the taste and its fluffiness. As I had never made a ‘no bake’ version, I was really worried about the end result. IMHO it was just  okay.  M on the other hand was very impressed with it. Without further ado for all those looking to indulge in some easy to make desserts here is what you need to make this Cheesecake! Ingredients: 30 Oreo biscuits without the icing Cream Cheese – 180g Set curd – 450g Gelatin powder -10g Powdered Sugar – 100g Melted Butter – 50g Method: 1. Take 20 Oreo biscuits and remove icing.
