Guacamole!


I had been busy and sleep deprived for most of last year and kept complaining about needing to just stop, rest and regain some balance. I spent the last 14 days doing just that. Now that I am all caught up with sleep and rest I thought I should start contributing to the blog. I hope the quarantine isn’t getting too bad for our readers and if it is watch this space for easy recipes, series recommendations and some really simple DIYs.

Given the quarantine we are rationing vegetables and groceries. With the situation escalating I don’t see the lockdown ending on the 14th.  I don’t want to make this post grim. So let’s get to the meal recipe below which is not just economical but also tasty and uses minimum ingredients, yet remains healthy.


Guacamole


Ingredients: (Serves 3)
  • 2 ripe avocados
  • 1medium sized onion finely chopped
  • 4 big cloves of garlic finely chopped
  • 2 tablespoons of finely chopped coriander
  • Juice of 1 small lemon
  • ½ tsp pepper powder
  • Pink Salt


Method:
  1. Cut the avocado and remove the seed. Scoop the avocado flesh on to a bowl and beat into a smooth or chunky paste.
  2. Add all the ingredients to this paste and mix well.

Sweet Avocado


Ingredients: (Serves 2)
  • 1 Ripe avocado
  • Powdered sugar
  • Roasted almonds, pistachios and cashews


Method:
  1. Cut the avocado and remove the seed. Scoop the avocado flesh on to a bowl and beat into a smooth or chunky paste.
  2. Add powdered sugar as per your taste and mix well and refrigerate.
  3. In a pan dry roast the nuts and garnish the paste before serving.



Cucumber salad


Ingredients:
  • 1 cucumber        
  • ½ tsp pepper powder
  • Juice of 1 small lemon
  • Salt


Method:
  1. Dice the cucumber and add the remaining ingredients.
  2. Keep refrigerated till serving time.


Yes, the cucumber salad sounds so basic but have you tried it with some guacamole? It is one of my favourite combinations especially during summers.

Notes:
  1. Avocado oxidises quickly so adding lemon juice right after mashing it, will help retain the colour.
  2. You can add tomatoes too. I prefer not to.
  3. You can have it with nachos, tacos or as a stuffing in your sandwich.
  4. Guacamole and cucumber salad by itself is a delicious combination.
